Today's Menu #16 Japanese Pepper Boiled in Sweetened Soy
Ingredients
1. Bring water to a boil in a medium pot and put 2 cups Japanese pepper, boil for 5 minutes. After boiled, immerse it in ice water for a minimum of 1 hour (the longer it is soaked, the spicier it will be). 2. Put 1/2 cup sake, 1/4 cup soy sauce and tamari sauce into a pot at low heat. 3. Remove layer of film from top as sauce is simmering. Simmer until the sauce is gone. 4. Place on plate and eat with your favorite dish. * When stored, it will keep for 6 months in refrigerator.

Ingredients
1. Cut the kelp into 1/2 inch squares. 2. Put kelp, 2 cup Dashi and 1/4 Vinegar into a pot. Cover and boil at low heat for 15 minute until the kelp tender. 3. Add 1/2 cup light soy sauce, 1/2 Mirin, 1 tablespoon Sake and 3 tablespoon Japanese Pepper Boiled in Sweetened Soy. Cover with paper, boil at low heat for 30 minutes approximately.
